2017 is the second full year that Warren Tech’s Acres farm will host farm dinners using organic produce grown by The Squeaky Bean Farm + Table partner/Acres farmer Joshua Olsen on Acres’ 3-acres and its 6,000-square-foot greenhouses.
September 17, Acres hosts its second annual fundraising farm dinner, “Seeding Futures at Acres,” where seven of Denver’s top chefs will use their agricultural acumen and culinary creativity to create a seven-course harvest bounty meal at Acres, served right next to where the produce was grown. The price is $91.80 per person, including tax but not including gratuity.
The menu for both of these events will include many local products, and vegetables and herbs grown at Acres. For each meal served at Acres mixologists will create special mocktails to highlight produce grown at Acres, and to pair perfectly with the meal (alcohol is prohibited on school grounds.) All proceeds from the farm dinners held at Acres will go to Warren Tech and Acres farm.

Olsen is finalizing plans for a very special fundraising dinner at Metro State July 9, when chefs from several Denver restaurants, working with Denver culinary institutions and organizations, hold a multi-course culinary delights dinner to benefit Metro State University Foundation, and the Colorado chapter of Les Dames D’Escoffier. The dinner will be held at the Springhill Suites Denver Downtown at MSU Denver, and include a silent auction and a tour of the hotel, which is a learning laboratory for the university’s cutting edge Hospitality, Tourism and Events Department. The menu for this dinner will also include many local products, and vegetables and herbs grown at Acres. The price is still to be determined.
Olsen has been managing Warren Tech High School’s Acres Farm since 2014. In line with the school’s mission to “marry industry and education,” Warren Tech’s multi-faceted education program educates S2TEM (Science, Sustainability, Technology, Education and Math,) culinary and JTS (Jeffco Transition Services) students, along with Executive Interns from Evergreen High School. Students help to grow produce, cook and serve Acres’ farm dinners, furthering their education of the journey of food from soil to plate.
